· Controls and records the flow of goods between Food and Beverage outlets as well as issues from stores to user departments.
· Checks the receiving voucher against the supplier’s invoice and purchase order for accuracy.
· Ensures supplier’s tax invoices are compliant with the FTA guidelines.
· Production of daily food flash cost of sales reports
· Ensures that the 10, 20 days and monthly food & beverage stock counts are performed as per company policy and procedures.
· Costing of all recipes before implementing a new dish on a menu to ensure right pricing.
· Analysis of the monthly sales statistics and highlighting slow moving items to the responsible head of department.
· Analyse outlet activity on a monthly basis. The analysis should include revenue, cost of sales and productivity.
· Prepares the month end closing reports for the following: food, beverage, and tobacco, general stock and operating supplies.
· Oversee the management of hotel stores and ensure the stockholding is in line with business levels.
