Description
Our client, an award-winning western restaurant group, is looking for an experienced butcher to join their team and expansion project.
DUTIES & RESPONSIBILITIES
- Ensure compliance with company hygiene procedures, communicating respectfully and professionally with the Executive Chef, Sous Chef, and Stock Controller.
- Check all meat and fish on delivery for quality and quantity.
- Maintain cleanliness of the meat and fish preparation rooms and ensure proper storage of all meat and fish items in freezers and fridges.
- Coordinate closely with the Executive Chef regarding ordering and preparation.
- Follow guidelines and requests from the Chef and F&B Manager efficiently.
- Keep all machines and equipment in good repair and handle with care, reporting maintenance needs promptly.
- Participate in sanitation inspections of your areas.
- Be fully aware of company controlling and food preparation procedures, including portion control outlined in the F&B manual.
- Maintain daily contact and information exchange with the Executive Chef or Sous Chef.
Requirements
Minimum of 3 years experience as a butcher in hotels, restaurants, or on cruise ships.Ability to prepare all meats and fish products as per company standards.Experience with quality control, production control, and storage of meat and fish.Possession of a culinary certificate from a recognized institution.Benefits
